1 large onion, chopped, 1 1/2 cups
1 large red pepper, chopped, 1 1/2 cups
1 cloves garlic, minced
3 pounds beef short ribs
3 tablespoons dry Caribbean jerk seasoning
1 (6 ounces) can tomato paste

Directions:
Directions:
Place onion, red pepper and garlic in bottom of 4-quart
slow-cooker. Toss short ribs with 1 tablespoon jerk
seasoning to coat; place over vegetables. In small bowl,
mix tomato past, 1/4 cup of water and remaining
seasoning; pour over ribs. Cover: cook on low until very
tender, about 10 hours.
