12 oz. stuffing shells Usually 36 shells.
1.5 lbs. cottage cheese or ricotta cheese
8 oz. package mozzarella cheese, finely diced
2 eggs slightly beaten
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. chopped parsley
1/4 cup grated parmesan cheese
3 cups tomato sauce or meat sauce, canned or home made

Directions:

Cook stuffing shells in 6-8 qts. of rapidly boiling salted water for 12-15 minutes. Do not over cook since you will be baking them soon. Drain and dry in a single layer on paper towels.

Combine ricotta and mozzarella cheeses with beaten eggs and blend with salt, pepper, and parsley.

Fill the shells with the cheese mixture. Spread a thin layer of sauce in a rectangular baking dish. Place the stuffed shells, 1 deep, in the baking dish and top with balance of sauce.

Sprinkle with grated cheese and cover with a sheet of aluminum foil. Bake at 350 for 25-30 min
