3 Tbsp Vegetable Oil
1/3 c. All-Purpose Flour
2 Red Bell peppers (ribs & seeds removed)
1 Onion chopped
4 Garlic cloves chopped
Course Salt
Ground Pepper
1 Pkg Okra (frozen cut) 10 to 12 oz
12 oz Smoked Andouille Sausage Halved length wise and cut into 1 inch thick pieces
1 Rotisserie Chicken skin and bones removed and shredded
1/8 tsp. Tabasco Habanero Sauce

1. In a 5 qt pot or Dutch Oven heat oil over medium. Add flour and cook, whisking constantly until pale golden, 5 to 7 minutes. Stir in bell peppers, onion,garlic, and oregano; season with salt and pepper. Cook, stirring occasionally until vegetables are crisp-tender, 10 to 12 minutes.

2. Add 4 cups of water, stir in okra and sausage. Bring to a boil and stir in shredded chicken and warm through. Season with salt and pepper and serve with cornbread.
