2 slabs of Babyback Ribs
Dry rub
BBQ Sauce (wet)
Applewood chips
Smoker

Preheat smoker to 225º
Don't forget the water pan. I put a minimum of 2 beers plus 3 solo cups' water for this application.
Remove the membrane on the back of the babyback ribs. Give each rack a light coating of olive oil, then apply kosher salt and your favorite dry rub.
Place the ribs on the smoker racks. After 30 minutes add applewood chips.
After 4 hours, mop the racks with your favorite wet bbq sauce.
Remove the water pan at this time also.
Smoke another hour at least until they pass the break test.
Remove from smoker and let them rest still in foil for at least 30 minutes.
