12 large fresh mushrooms
2 tbsp butter
1 sweet Italian sausage, minced
1 small garlic clove, minced or crushed
1/4 tsp dried oregano
1/4 tsp salt
1 cup dry bread crumbs
2 tbsp marsala or sweet sherry
2 tbsp water
2 tbsp freshly grated Parmesan cheese

Preheat broiler. Stem mushrooms and wipe caps with a camp cloth. Mince the stems and reserve. Melt butter in a skillet; add mushroom stems, sausage and garlic. Cook over medium heat for 10 minutes, stirring often. Mash sausage against the side of the pan with the back of a spoon to break it up. Remove from heat when mushrooms are soft and mixture is well combined. Stir in remaining ingredients, except the cheese. Blend well. Brush mushroom caps with olive oil and place cap-side-down on a well-greased roasting pan or cookie sheet. Stuff the caps with the sausage dressing, sprinkle with cheese, and broil about 5 inches from the heat for 10 minutes or until sizzling hot.
