1 onion, chopped
1 tablespoon vegetable oil
1 red pepper, chopped
3 cups cooked rice
1 green pepper, chopped
2 – 15 oz cans black-eyed peas or crowder peas
1 lb bacon, cooked and crumbled (can also use leftover ham, cubed)
salsa
sour cream

Directions:
Directions:
In a large skillet, cook onion and peppers until crisp-tender. Add bacon or ham. Drain peas and add to skillet. Mix well and heat thoroughly. Serve over rice. Top with salsa and sour cream.
