1 1/2, c. dried cranberries
1 c. chopped apple ( 1 medium apple)-not Delicious or Mac
1/2 c. butter
1 c. sugar
2 large eggs
2. c. flour
1/4 ts. salt
1 T. grated orange rind
3/4 c. orange juice
1. c. chopped walnuts
2 T. oil
1 ts. cinnamon
1 1/2 ts. baking powder
1/2 ts. baking soda

Heat oven to 350º. Place rack in center of the oven. Cover cranberries with water in a small saucepan. Bring to a boil. Shut off and let soak for 1/2 hour. Drain and chop. Peel and chop apple. Cream butter and sugar until light. Add eggs and beat after addition. Combine all the dry ingredients. Add to batter alternately with the orange juice. Add the chopped cranberries, apple and orange rind. Stir in walnuts. Line the bottom of a loaf pan with parchment paper. Spray pan with PAM. Bake approximately 1 hour or until tester inserted in the middle comes out clean. Cool in pan until just warm, then invert and remove bread. Finish cooling on a rack.
