1½ cups sugar
2 teaspoons dry mustard
2 teaspoons salt (I use less)
2/3 cup vinegar
3 tablespoons onion juice
2 cups salad oil (not olive oil)
3 tablespoons poppy seeds

Directions:
Directions:
Mix sugar, mustard, salt and vinegar in a blender. Add onion juice and stir thoroughly. (The onion juice is obtained by grating a large onion on the fine side of a grater or putting an onion in the blender until it is pulp and then straining it so you have only juice. Prepare to weep in either case!) Slowly add oil, beating constantly and continue to beat until thick. When you think the mixture is thick enough, beat 5 minutes longer! Add poppy seeds and beat for a minute or so. Store in a cool place or in the refrigerator. (It can be made with an electric mixer or even a rotary beater, if your endurance is better than mine!) If the dressing separates, pour off the clear part and beat again, adding the poppy seed mixture slowly. It will not separate unless it becomes too cold or too hot.

Poppy Seed Dressing is good with any kind of fresh salad, especially fruit salads. I love Spring Mix, mandarin oranges, craisins and toasted almonds with this dressing. I almost always have some in the frig. I keep it in a Mason jar and just shake it good if it separates. It works!
