2 eggs, beaten
1/2 tsp. salt
2 c. milk
2 c. flour (maybe more)
sugar to taste

Sift the flour and salt into the bowl of a mixer equipped with the whip attachment. Turn on the mixer on medium low.
Slowly add the milk.
Add the eggs one by one. Wait until the eggs are completely incorporated before you add the next one.
Continue beating until the mixture is thoroughly combined, thick and creamy.
For frying, use two non-stick pans to form a “frying pipeline”. Heat up a little oil in each.
Take your pan with HOT frying oil in one hand and take about a ladle (1/2 c.) of batter with the other. Pour the batter into the pan, then swivel it around so it coats the entire bottom.
Let the pancake cook until the bottom starts to brown and the top starts to firm up. Take a spatula or similar long, flat tool, insert it under the pancake and, with a quick flip of the wrist, turn it.
Let the pancake cook fully, then slide it onto your holding plate. Keep warm until all pancakes are done.
Repeat with the remaining batter.
Spread with butter and sprinkle with sugar. Spread with jelly or jam or syrup, roll up and enjoy!
