1 head of iceberg lettuce, cleaned and broken into bit sized pieces
1 cup celery, chopped fine
1 cup onions, thinly sliced
½ cup bell pepper, chopped fine
1 tomato, sliced thin
5 hard-boiled eggs, sliced

Dressing
2 cups real mayonnaise
2 tablespoons sugar

Sprinkle on top
9 strips of crisply fried bacon
Grated cheddar cheese

Layer all of the above in order given, except bacon and cheese. Mix mayo and sugar well. Spread dressing on salad sealing as well as possible. Sprinkle crumbled bacon and cheese over the top. Cover with Saran and refrigerate at least 8 hours or overnight. DON'T TOSS TO SERVE!

This always makes a hit and it is a great "do ahead." Marge Wagner gave me this recipe. She taught with me at L.B.C. while her husband, Charlie, was in medical school at Medical College of Georgia. He is now a pediatric surgeon doing organ transplants in Little Rock. We still keep in touch. They're usually here in March for the Moretz Society and we get in a good visit.
