1/2 tsp. salt
1/8 tsp. pepper
2 2 1/2 to 3 lb dressed pheasants
2 T cooking oil
2 slices bacon
1/ C chopped onion
2 tsp. flour
1/2 C marmalade
1/4 C dry wine
1 T lemon juice

Directions:
Directions:
Mix salt and pepper; rub inside cavities of pheasants. Cook bacon in skillet till crisp; crumble and set aside. Cook onion in drippings till tender but not brown. Stir in flour; add marmalade, wine and juice. Cook, stirring till thick and bubbly. Stir in bacon. Brush birds with marmalade mixture. Roast 25-30 minutes, brushing with marmalade mixture. Heat remaining mixture and serve with birds.

You can substitute 4 Cornish hens, 1 to 1 1/2 lbs each in place of pheasants.
