"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Combine catsup, water, chili sauce, vinegar, Worchestershire sauce, brown sugar, lemon juice, paprika and 2 1/4 tsp. salt, garlic and hot pepper sauce in large sauce pan. Heat to boiling, reduce heat and simmer 30-45 minutes until sauce is a good consistency for basting. Cut meat into 3-4 rib portions. Sprinkle with 1 tsp. salt and 1/2 tsp. pepper. Put on rack in shallow baking pan. Bake at 450º for 30 minutes. Remove from rack, drain off excess fat. Put ribs in baking pan meaty side down. Brush with sauce. Reduce oven temperature to 300º and bake 30 minutes. Turn ribs meaty side up, brush with sauce. Top each rib with an onion slice if preferred. Bake about 1 hour brushing frequently with some of the remaining sauce, until ribs are tender and nicely browned. Add lemon slices to ribs during last hour of baking if you wish. Serve remaining sauce on the side.

This recipe was on a newspaper clipping from the 1970's. Mom wrote the substitution ingredients listed above on the recipe card, so they must work well.
