1 10 oz pkg frozen chopped spinach
1/2 C chopped onion
2 slightly beaten eggs
1/2 C grated Parmesan cheese
1/2 C shredded Cheddar cheese
1/2 C blue cheese salad dressing
8 T butter or margarine, melted
1/8 t nutmeg
1/8 t garlic powder
1 8 1/2 oz pkg corn muffin mix

Directions:
Directions:
In saucepan combine spinach and onion; cook according to package directions. Drain well, pressing out excess liquid. Combine eggs, cheeses, salad dressing, butter, nutmeg, and garlic powder. Add spinach mixture and muffin mix; mix well. Cover and chill. Shape dough into 1 inch balls. Chill or freeze. To serve, place chilled or frozen balls on baking sheet. Bake in a 350º oven till light brown. Bake chilled balls for 10-13 minutes; bake frozen balls for 13-18 minutes. Serve warm.
