Ingredients: Dough 4 cups flour (Rose Kramer would add a little baking powder) 2 eggs 1 1/4 cups water or enough or enough to make a soft dough
Filling 4 cups fruit ( if canned drain well) 8 teaspoons sugar 2 cups of the liquid drained off of the dumplings

Directions:DUMPLINGS: Mix flour, eggs and 1 1/4 cups water in a mixing bow. Knead until dough is smooth. Roll out on floured surface to 1/8 in thickness. Cut dough into 4 inch squares. Fill with 1/4 cup of fruit (you can substitute blackberries, strawberries or cottage cheese for the sour cherries if you wish). To close the dough square, bring opposite corners of square together and pinch edges together forming a triangle. Seal so the juice won't leak. Then, bring a large pan of water to boil. When water is at a ROLLING boil add the dumplings and cook 10 minutes. (Don't cook any longer or the dumpling will pop open).Take dumplings out with a strainer and drain over a sauce pan. (Use the same sauce pan when you make the sauce to pour over the dumplings). Place dumplings on a platter.
SAUCE FOR DUMPLINGS Melt 1/4 cup butter in a sauce pan with 1/2 cup chopped onion and brown. Then add 1//2 cup sweet cream and 1 tablespoon of sugar. Bring to a boil and remove from heat. Pour over the dumplings that are in a platter and serve. |
