For ribs:
1 tsp. salt
1/4 tsp. pepper
1/4 c. flour
3 lb. beef short ribs (cut into individual servings), dredge in flour mixture
1 medium onion (minced)
3 tbsp. butter or shortening
4 c. water
Parsley Dumplings:
2 c. sifted flour
3 tbsp. baking soda
1 tsp. salt
1/4 c. minced parsley
1/4 c. shortening
1 egg
3/4 c. milk

Short ribs :
Combine salt, pepper and flour in large bowl. Dredge ribs in flour mixture.
On medium-high heat, melt 3 tbsp. of butter/shortening in large skillet (make sure it has a tight fitting lid). Saute minced onions for 1 to 2 minutes. Add meat and brown on all sides, 5 to 6 minutes total. Slowly add water to meat and onions, cover and simmer slowly for 1 1/2 hours or until tender. Top with parsley dumplings.

Parsley Dumplings :
Sift together flour, salt, and baking powder. Cut in minced parsley and shortening with pastry cutter or 2 dinner knives, until mixture resembles coarse meal. In a small bowl, combine beaten egg and milk. Slowly add to dry ingredients and mix until all flour is dampened. Turn up heat on ribs until boiling, drop dumpling dough by spoonfuls on top of boiling ribs. Cover tightly and steam for 12 minutes. Do not remove lid during this process. Serve immediately.
