2c shredded summer squash, drained of excess moisture
1c shredded zucchini, drained of excess moisture
1 med onion, sliced to match squash shreds
4 slices of bacon
2 stems of thyme (just the leaves)
1/2tsp. garlic & herb (Mrs.Dash or similar)
6 med. basil leaves
4 eggs
salt & pepper to taste

Preheat oven to 350º
On the stove top, cook the bacon in a heavy skillet until done, set aside.
To the pan of bacon drippings, add the onion, squashes, thyme and garlic seasoning which have been tossed together. It is important to drain as much moisture from the squash as possible in order to attain crispiness. Press the vegetable mixture into the pan in an even layer. Cook for about 5-7 minutes over med high heat until the edges begin to brown.
While the veg is coming up to heat and reaching it's first browning, finely chop the bacon and sprinkle this on top of the mixture in the pan.
Give the mixture a stir to incorporate the browned veg & bacon bits and pat down into an even layer again.
Cook for another 5 minutes, check bottom for browning. Stir the new browned surface again and pat down into an even layer.
Crack the eggs directly onto the top of the hash and and place the pan into the preheated oven for 5-7 minutes. Remove from the oven when the whites have set (the yolk may or may not be fully set).
Plate the hash and garnish with slivers of fresh basil leaves.
