Susan Russel’s Favorite Banana Chocolate Chip Muffins

At least 4 very ripe bananas (I try to have 5 or 6 if I have them). Freeze ripe bananas, thaw, and cut end off and squeeze out. The riper the bananas, the better the taste.
¾ cup sugar
2 eggs
½ cup melted butter or ½ cup canola oil
2-1/2 cups of flour
1 Tbsp. baking powder
1 tsp. baking soda
½ cup chocolate chips (can use cranberries instead for a change)

Directions:

Mash bananas in large mixing bowl. Add sugar, eggs and butter/oil. Mix well.
In a separate bowl, combine flour, baking powder and baking soda, and mix well.
Stir this flour mixture into the banana mixture with chocolate chips just to moisten.
Spoon into 12 large muffin cups and bake at 375 degrees for 20-25 minutes or until tops spring back when lightly touched.
Let cool. (The muffins freeze well in a plastic bag).
Note: Keep away from your friends if you want any muffins for yourself.

Never throw out overripe bananas. Put them straight into the freezer. They seem to survive in there years, possibly through graduate school if you don't move or get a craving for banana-something.
