1-2 1/2 pound boneless chuck roast, 1-onion sliced, 1/4 cup all purpose flour, 1- (1.2 oz) package of beef stew mix, 1- (1 oz) package of ranch dressing mix, 1- (0.7 oz) package of Italian seasoning mix, 1/2 cup water, 5 whole peeled carrots (optional), pinch salt and pepper to taste

Directions:
Spread onion slices on bottom of crock pot. Spread flour onto work surface. Sprinkle roast with salt and pepper and roll roast in flour to coat all sides. Using the edge of a small plate, pound flour into the meat. Place floured roast into crock pot on top of onions. Whisk together the stew mix, italian dressing mix, and ranch dressing mix. Whisk mixes together with the 1/2 cup water. Pour mixture over roast. Distribute the carrots around the meat (optional). Cover and cook on low for about 8 hours (or until roast is tender and gravy is thickened).

Personal Notes:
The recipe calls for dry beef gravy mix, but I prefer the beef stew mix. Also, I substitute the salt with garlic salt for added flavor.
