1-1/2 c flour
2 tsp baking powder
1/2 tsp baking soda
1/8 tsp cream of tarter
1/8 tsp salt
1/2 no-sugar-added peanut butter
1/2 c unsalted butter
1 lg egg
1/2 c pureed banana (about 1 ripe med. banana, mashed)
1/2 c Sugar Twin Brown Spoonable
1/4 c Sugar Twin White spoonable
2 tsp vanilla

Fruit Topping (optional):
1/3c all-Fruit no-sugar-added Strawberry or
Raspberry fruit Preserves
1/2 tsp Sugar Twin White spoonable

preheat Oven 350º
Sift together first five ingreds.
I a lg bowl, cream together the peanut butter and unsalted butter until fluffy. At low speed, mix in the egg, pureed banana, Sugar Twin Brown and sugar twin white and vanilla. With mixer at low speed, slowly add sifted dry ingreds. until fully mixed.
Shape dough into 1-inch balls. Place on ungreased cookie sheet 1 inch apart. Fatten cookies with your palm.
If desired, make a fruit topping by mixing preserves with sugar twin white. with your thumb, make an indent in the middle of each cookie and fill with 1/2tsp of the fruit topping.
Bake for 12-14 mins. or until bottoms are golden brown. Remove cookies from cookie sheet to wire rack cool completely.
