¾ c. shortening
¾ c. brown sugar
1 egg
½ tsp. vanilla
3 ripe bananas, mashed
¼ tsp. salt
1 tsp. baking soda
2 c. flour

Frosting:
6 tbsp. brown sugar
4 tbsp. cream or milk
4 tbsp. butter
1 tsp. vanilla

Directions:
Cream shortening and sugar; add egg and vanilla. Add bananas. Beat well. Sift and add dry ingredients. Bake 10 minutes at 350º. (I put parchment paper down on my cookies sheets rather than greasing).

Frosting:
Bring cream/milk and butter to a boil and add powdered sugar (about a 1/3 c. at a time) STIRRING CONTINUOUSLY until the desired consistency to spread. Add 1 tsp. vanilla and stir in. It’s easiest to frost the cookies while the frosting is still warm/hot. It’s very difficult to spread once it cools.
