1 cup unblanched almonds
1 cup sugar
2 large egg whites
¼ teaspoon almonds extract
¼ teaspoon vanilla extract

Directions:
Directions:
Grind the almond to a paste in a coffee grinder (that hasn't been used for coffee) or blender. Blend two thirds of the sugar and both the egg whites, adding a little at a time, until you have a soft mixture. Beat hard with an electric mixer about 3 minutes to form a meringue. Add almonds and flavoring. Drop from teaspoons or a pastry tube onto paper-lined cookie sheet. Sprinkle with remaining sugar. Bake 15 to 20 minutes at 375° or until the tops are cracked and light brown.
