1 - 8 ounce can almond paste (you buy)
1 cup sugar
2 egg whites

Directions:

Cut up paste into small pieces. Add sugar and the egg whites and mix until smooth. Drop from a teaspoon onto paper-lined (parchment paper or a greased paper bag) cookie sheet. Bake at 325° degrees for about 30 minutes. Allow to cool at least 10 minutes, then wet back of paper to remove.

This is my very favorite cookie. Many bakeries used to make them, but I have not been able to find them in year - so I learned to make them! They are heavenly plain, but to make them ever better place the two flat sides together with chocolate fudge icing (sandwich style) and let dry.
