8 Med. Sweet Potatoes
1 C. Butter
2 C. Brown Sugar
1/2 C. Water
1/2 C. Shredded Coconut

Directions:
Directions:
Boil sweet potatoes till tender and remove from pan, drain and let cool down so that you can peel them. Cut into 1 inch slices. Combine butter, water and brown sugar in pan and cook on med. till it thickens, about 10 min. Add sweet potatoes, lower heat and simmer 20 min. Sprinkle with coconut before serving.
