3 lb potatoes (white or yukon gold)
3 T apple cider vinegar
3-4 hard boiled eggs
1 c celery, chopped
1/2 c carrots, chopped small
1/2 to 1 c onions, chopped
Approx 1 c mayonnaise (this will vary by your taste)
paprika (for garnish)

Directions:
Directions:
Peel potatoes and cut into bite size cubes.
Place into cold salted water, cover, and bring to boil
Boil until just tender (still firm, not mushy), about 5 min
Remove from heat, drain, and add vinegar, cover and shake gently to coat potatoes with vinegar.
Chill for several hours or overnight
Add celery, carrots, onions, and mayo - mix well
Peel and slice hard boiled eggs and arrange on top of salad
Garnish with paprika

The key to this recipe is the cider vinegar on the hot cooked potatoes, and then letting them cool. Use 1T vinegar for each pound of potatoes, this recipe is easy to scale up for a crowd!
