"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
1 serving premade pizza dough (either store bought or homemade)
2 cooked chicken breasts (either leftovers or from a store-bought chicken)
1 cup BBQ sauce
1/2 red onion, sliced fine (optional)
2 1/2 cups mozzarella cheese
Juice from 1/2 lime (optional)
1/4 cup chopped fresh cilantro (optional)

Directions:
Directions:
1. Adjust oven rack to lowest position, set pizza stone on oven rack (if using), and heat oven to 400 degrees.
2. Shred chicken using two forks, or your hands. Stir in 1/2 cup BBQ sauce until evenly combined.
3. Lightly flour counter. Press pizza dough ball into 8-inch disk. Using flattened palms, gently stretch disk into 12-inch circle, working along outer edge and giving disk quarter turns. (You can also use a greased baking sheet if you don't have a pizza stone. In that case, transfer the pizza dough to the baking sheet.)
4. Spread remaining 1/2 cup BBQ sauce on the pizza dough, spreading to within 1 inch of edge. Add chicken and spread evenly. Top evenly with cheese. Carefully move pizza to pizza stone (careful, its hot!) and cook pizza until cheese is melted and crust is browned (about 20 minutes).
5. Carefully remove pizza from the oven and top with lime juice and chopped cilantro. Let rest 5 minutes, slice and serve!

This recipe is a favorite to use up leftover chicken or when we buy a roasted chicken from the store. Easy, fun, and delicious!
