"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
4 tbsp butter,
2 tbsp honey,
1/2 tsp. cajun seasoning,
1/2 tsp black pepper,
3/4 cup water,
1 1/2 lbs pork tenderloin

Directions:
Directions:
Preheat oven to 375º. In an oven proof pot, melt butter and honey over medium heat. Sprinkle pork tenderloin with cajun seasoning and pepper. Brown each side in melted honey and butter for 5 minutes on each side (reduce heat if honey starts to burn). Put pot in oven and cook for 15-20 minutes. Take out and transfer pork to plate. Add water to the pot and mix. Heat to boil over medium heat and simmer for 5 minutes to reduce. Diagonally slice pork tenderloin and drizzle sauce over tenderloins.

Personal Notes:
Personal Notes:
I had 2 pork tenderloins that were just over 2 lbs. and had to cook for an extra 10-15 minutes in the oven. I just removed it from the honey butter sauce and cooked it in a pyrex dish by itself. Just cook until the meat temps out properly.
