4 leeks, cut in 1/4 inch slices
1 medium onion, diced
4 medium potatoes peeled and diced
4 cups chicken broth
1 cup sour cream
pepper to taste
1 1/2 tbsp. butter

Directions:
Directions:
Chop the leeks first and place in a bowl of cold water to clean off the grit and dirt. Let sit 10 minutes.
In a large saucepan melt the butter.
Add the leeks and onion.
Cook covered, until all the vegetables are tender.
Stir occasionally.
Add the potatoes and broth.
Simmer, covered for 40 minutes.
Add sour cream and heat to serving temperature. Do NOT boil.
Season with pepper and serve at once.

I found this written in my mom's cookbook. She had one friend who is Irish - Mrs Horan and this was from her. It's say's Granny's Irish Leek Soup, so I assume it's from Mrs Horan's mother.

When using leeks always make sure they are washed. They be gritty if not washed.
