One package ( 4 lb or 1.81 kg) of Thompson's White Navy Pea Beans

1 cup lightly packed brown sugar
1 tablespoon salt
2 teaspoons Kean's dry mustard
1 teaspoon black pepper
1 cup cooking molasses
1 lb fat salt pork, sliced

Directions:
Directions:
Wash pea beans in cool water and then soak overnight
Preheat oven to 250 degree
Drain and cover with fresh water.
Bring to a boil and simmer,uncovered ,until skins split when blown upon .
Drain and place beans in bean crock or large slow cooker
Mix - two medium sized quartered onions throughout beans
Mix together remaining ingredients and pour over beans
Insert sliced salt pork near surface
Add sufficient boiling water to cover beans

Bake covered in 250 oven or slow cooker on medium for 6 -8 hours, adding a small amount of boiling water from time to time so that beans do not become dry.
Uncover last 30 minutes of baking.

Baked beans call for long baking to develop the flavor fully.

After five hundred years of being part of Canadian history, beans continue to be a stable and enjoyed by many. ,This recipe makes approximately 20 servings.I have baked beans in the sand of our cottage on numerous occasions. The wonderful antique cast iron pot I use to bake the beans has served many family and friends over the decades.
