1 tbsp butter or marg
1 lg carrot-,chopped
2 med sweet potatoes peeled and diced
1/4 tsp salt
1/4 tsp ground nutmeg
1/3 cup half & half
1 lg yellow onion,chopped
1/4 cup parsley-minced
1 & 3/4 cup chicken broth
1 tsp ground cinnamon
1/4 tsp pepper
1 cup milk

Directions:
Directions:
In a large saucepan,melt butter over moderately high heat
.Add the onion ,carrot and parsley and cook for 5 minutes or until vegetables are tender,stirring often.Add the remainder of the ingredients except the milk and half & half and bring to a boil.

Reduce heat and simmer covered, for 20 minutes or until the sweet potatoes are tender.cool slightly,do not drain.In a food processor or blender,process half the batch at a time until smooth.Return the mixture to the saucepan.Stir in the milk and the half&half.

Cook uncovered for 5 minutes or until heated through.Before serving,stir in 1/4 cup milk .May be chilled and served cold.
