2 boneless skinless chicken breasts
Salt
Pepper
Spinach
1 Red Pepper
1 Orange Pepper
1 Cucumber
1 Tomato
Sliced Almonds
Croutons
1/4 Cup Goat Cheese
1/8 Cup Cream Cheese
Olive Oil
Bread Crumbs
Balsamic Vinaigrette Dressing

The Salad-
I like to do this first so it's ready to serve when the chicken and goat cheese are done.
Rinse all of your veggies and put the spinach into a large mixing bowl.
Chop the peppers, cucumber, tomato, and tomato into small pieces and add to the spinach.
Then add about 1/4 cup of slice almonds and 1/4 cup of croutons. (You can add as much or as little as you want of any of these things, I just do it to taste)
Mix together

The Chicken-

To start take two chicken breasts and pound until flat. Season on both sides with salt and pepper and any other desired seasoning or marinade. Brown on both sides and cook until done.

The goat cheese-
Preheat oven to 350
Take a baking tray and line it with parchment paper
Take out three separate small bowls.
In one bowl add goat cheese and cream cheese and mix together well. When done make the soft cheese mixture into one inch balls.
Have olive oil in another bowl and bread crumbs in the other. Coat each ball in olive oil and cover them completely in bread crumbs.
When the goat cheese balls are covered in the olive oil and bread crumb mixture place on the tray lined with parchment paper.
Place in oven and cook until the crumbs turn golden brown.

When both the chicken and the toasted goat cheese balls are done, serve the salad. Add balsamic dressing and then place goat cheese and chicken on top.
