Curry Paste Ingredients:
3 Thai Red Chiles (removed stems)
1/2 tsp kosher salt
2 tbsp lemon grass (use white part)
2 tbsp peeled, sliced galangal (Thai ginger) - substitute regular ginger if can't find
1/2 cup shallots, chopped
1/4 cup garlic cloves, peeled
1 tbsp shrimp paste (Lee Kum Kee was the brand I found in my local grocery store in the Asian food section) If you can't find shrimp paste substitute fish sauce in Asian food section.

Put all the above ingredients in a blender and whiz it until smooth. Set aside. Can be made up to 1 week ahead. :)
