**Sweet-Potato Shepherd's Pie Recipe

1 lb ground meat
2 tbsp ketchup
1 tsp dried basil
1 shallot or small onion, finely grated (I just chopped it up real small)
1 tsp freshly ground black pepper
1 egg

Topping:
4 sweet potatoes
1 egg
1/4 cup seasoned corn flake crumbs, for sprinkling

Directions:
Directions:
Preheat oven to 350ºF. Combine all ingredients for the meat mixture and mix well. Press onto the bottom of a 9 inch round Pyrex or oven-safe dish. Cover tightly and bake for half an hour.
Meanwhile, place whole sweet potatoes in a foil pan and cover tightly. Bake for 1 hour, then peel, cut in half, and scoop the flesh into a bowl. Let cool slightly. Add egg and mix.
When meat is done, remove from oven. Pour any liquid or gravy into the mashed sweet potatoes. Mix very well; you can use an immersion blender to make it smooth and light. Place sweet potatoes on top of the meat and sprinkle with cornflake crumbs. Cover and bake for 15 minutes, then uncover and bake for 10 minutes more. Let cool for 2-3 minutes and cut into wedges.
*Variation: You can substitute Idaho potatoes for the sweet potatoes.
