2 1/2 cups white or basmati rice
salt and pepper, to taste
3 red peppers
3 green peppers
3 orange peppers
oil for sautéing
2-quart glass bowl

Directions:
Directions:
Cook the rice according to package directions. Add salt and pepper to taste. Dice all the peppers, keeping each color separate. Saute each color pepper separately in oil. Separate a small portion of each color pepper and reserve for garnishing the top.
Place one cup of rice in the bowl. Using the back of a cup, press the rice down; add red peppers. Repeat process, layering rice and different colored peppers until done. Garnish the top with reserved colored peppers.
*Tip: Assemble just prior to serving so the dish remains warm.
*Variation: Add sautéed onions to each layer of peppers. The onions should be placed in the center of the bowl so as not to be seen through the glass.
