8 frankfurters, cut in thirds
2 large onions, chopped
8 potatoes
1/3 cup oil
4 eggs
2 cups flour
1 tbsp. salt
1/2 tsp. pepper
Glaze:
1 egg, beaten
sesame seeds

Directions:
Directions:
Boil potatoes. Drain water from pot and mash potatoes. Saute onions in oil until onions turn golden. Add sautéed onions to mashed potatoes and let cool. Add eggs, flour, salt and pepper and mix together. Preheat oven to 350ºF. Line two 12-cup muffin tins with cupcake holders. Place one third of a frankfurter in each cupcake holder. Using an ice cream scoop, place one scoop of potato mixture on top of the frankfurter. Repeat until all folders are full. Using a pastry brush, paint beaten egg on top of each potato puff. Sprinkle with sesame seeds and bake for 40 minutes.
Tip: These hush puppies can be prepared in advance and frozen raw. You can pop them in the oven frozen; just add 10 minutes to the cooking time.
