1 cup shortening (butter or margarine)
2 cups sugar
¼ teaspoon salt
4 eggs, separated
3 cups cake flour, sifted before measuring
3 tablespoons baking powder
1 cup milk
1½ teaspoons vanilla

Directions:
Directions:
Cream shortening, sugar and salt together until light and fluffy. Add beaten egg yolks and blend until smooth. Sift flour and baking powder together 3 times and add to first mixture alternately with milk and vanilla. Fold in stiffly beaten egg whites. Pour into 2 greased and floured 9" cake pans. Bake at 375° for 35 to 40 minutes. After removing cake from the oven, cool on racks about 15 minutes before turning out of the pan to finish cooling. (This is also the right amount of batter for a sheet cake pan.)

I sometimes do not bother to separate the eggs, just add them one at a time and beat well. It works fine. I often grease and line the pans with wax or parchment paper - makes for very easy removal. (You only need to line the pans on the bottom.)

This was the cake that Mother always made.
This and Pound Cake were the cakes I remember most, both at our house and at friends homes.
