Ingredients: 2 cups sugar ½ cup vegetable oil 1 can (16 ounces) pumpkin (2 cups) 4 eggs, beaten 2 cups Bisquick baking mix 2 teaspoons ground cinnamon ¼ teaspoon cloves ½ cup raisins (Plump by covering with water and microwaving for about 1 minute, then drain)
Cream Cheese Frosting 1 package (3 ounces) cream cheese, softened 1/3 cup butter or margarine, softened 1 tablespoon milk 1 teaspoon vanilla 2 cups powdered sugar 1 teaspoon cinnamon

Directions:Heat oven to 350º F. Grease jelly roll pan (15½" x 10½" x 1") Beat sugar, oil and eggs in large mixing bowl on medium speed, scraping bowl occasionally. Stir in baking mix, cinnamon and raisins. Pour into pan. Bake until wooden pick inserted in center comes out clean, about 25 to 30 minutes. (Mine took longer, but I used frozen, thawed pumpkin, which may have had a lot more liquid.) Frost with Cream Cheese Frosting. Cut into 1x3 inch bars. Cool and refrigerate. Remove from frig. 15 to 20 minutes before serving.
Cream Cheese Frosting Beat cream cheese, butter, milk and flavorings until creamy. Add powdered sugar until smooth. |

Notes: I always recycle the Halloween pumpkin by cutting it in half, cleaning out the seeds, and baking it upside down and at 350° for an hour (one half at a time). Cool the pumpkin, remove the rind and put 2 cups of pulp in freezer One Zip bags for bars, bread, pies, etc.
