6-7 lbs beef brisket, well trimmed
1 T salt
1/2 T pepper
1 clove garlic, minced or pressed
1 T paprika
2/3 c brown sugar
4 T vinegar
1 c catsup
1 onion, sliced

Directions:
Directions:
Season brisket with salt, pepper, garlic and paprika. Put brisket in a roasting pan. Mix
sugar, vinegar and catsup; pour over top. Spread onion slices on top and cover roaster with foil or lid. Place in 350º oven and cook for 2 1/2 - 3 hours. Remove from oven and let cool. Place in refrigerator and let the whole brisket sit there until the day you intend to serve it or slice it and freeze it for a much later time. (It can sit happily for a week in the refrigerator.) On the serving day, remove from juice (and slice if you haven't done this already.) Return meat slices to juice. Cover with foil and place in 350º for 45 minutes.
