Tony Chachere's Cajun seasoning or Lawry's seasoned salt
Trimmed brisket
1/2 cup brewed coffee
aluminum disposable turkey pan
16 oz. Claude's Barbeque Brisket marinade sauce
2 cups BBQ sauce
electric knife

Directions:
Directions:
Place brisket in pan and rub in seasoning liberally. Pour coffee and marinade in pan. Place uncovered in refrigerator for 3-7 days, turning brisket every 24 hours. Place fat side up and cover with foil. Preheat oven to 225º; cook 6-8 hours until fat scrapes easily from brisket. Remove from oven and let rest 15 minutes. Remove fat with spoon. There will be a small amount of meat called the top layer, remove fat from this also. Preheat oven to 300º. Remove all fat & marinade from pan. Place a layer of BBQ sauce over both pieces of brisket. Place in oven 10 minutes. Carefully remove brisket from pan to cutting board with two spatulas. Cut against the grain with electric knife. Enjoy.
