1 big yellow onion, diced
4 cloves garlic, diced
1 fine Eugene-based micro brew beer, or whatever you have in the fridge, the darker the better
1/4 cup water
1 cup ketchup
1/4 cup brown sugar
1/4 cup Worcestershire sauce
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon mustard, preferably brown
Salt to taste, don’t forget the salt
1 dried chipotle pepper

In a large pot stir all ingredients except the chipotle pepper, then put a cover on the pot and simmer for 30 minutes.

Take the top off and put in 1 dried chipotle pepper, or 1 chipotle canned in adobo sauce if that’s what you have. Nobody is telling you not to put in two chipotles here (that’s the option play).

Continue to simmer the sauce without a cover until it has thickened, at least another 30 minutes. If it gets too dry, add more beer.

Brush some on beef or chicken just before it comes off the grill then serve the remainder at the table.
