1 tbsp. extra-virgin olive oil
1 1/2 pounds chicken breast tenders, cut into bite-size pieces
8 cups (about 2 1/2 lbs.) thinly sliced zucchini
1/2 cup chopped white onion
1 (15 1/4 oz.) can whole kernel corn, undrained
1 (14 1/2 oz.) can diced tomatoes with green chilis and onion, undrained
1 1/2 tsp garlic powder
1/2 tsp. cumin
Salt and pepper to taste
1/2 cup chopped fresh cilantro

In a Dutch oven, heat oil on medium high until hot. Add chicken, cover and cook 4 to 6 minutes, stirring occasionally or until no longer pink. Stir in zucchini, onion, corn, tomatoes, chiles, garlic powder, cumin and salt and pepper to taste. Heat to boiling. Reduce heat to medium low; cover and simmer 10 to 15 minutes or until vegetables are tender, Stir in cilantro; cook 3 more minutes, stirring occasionally.
