1 deep dish pie crust
8 eggs, slightly beaten
1/4 cup half and half
1/4 cup pepper jack cheese, shredded
1/4 cup cheddar cheese, shredded
1/4 tsp. salt
1/8 tsp. nutmeg
1/4 tsp. pepper
2 oz. mushrooms
1/4 cup green pepper
1/4 cup chopped onion
1/2 cup cheddar cheese, shredded
2 tbsp. of chopped chiles

Directions:

Cook pie crust according to instructions and let cool.

Preheat oven to 375º.

In a large bowl, combine all ingredients except for the 1/2 cup of cheddar cheese. Pour egg mixture over cooled crust. Sprinkle with remaining cheddar cheese. Cook for 30 to 45 minutes or until set in the middle. Let stand for 5 minutes

Top with salsa and sour cream.
