2 Tbs oil
2 cups cooked brown rice
2 eggs
2 Tbs reduced sodium soy sauce
1 Tbs Sriracha sauce
2 cups coleslaw mix
1 cup frozen shelled edemame (thawed)
1/4 cup cilantro leaves
1/4 cup chopped peanuts

Directions:
Directions:
Heat oil over high heat. Add rice and cook about 1 minute. Lightly beat eggs and stir into rice, cooking about 30 seconds. Stir in soy sauce and Sriracha sauce, coleslaw mix and edamame and cook until all is heated through. Garnish with cilantro and peanuts.
