3 lbs Chicken thigh meat cut into chunks (bone in is fine)

1/4 cup white vinegar

1/2 cup soy sauce

1 tbsp coarse ground black pepper

1 tbsp brown sugar (optional)

2 diced garlic cloves

3 bay leaves

1/4 tsp salt

1/4 cup plain water

Directions:
Directions:
Put the vinegar, soy sauce, pepper, sugar, salt and garlic in a sauce pan. Stir ingredients together to mix. Add the chicken chunks and bay leaves and then add the rest of the liquid and cover the pan.

Bring the marinade to a boil. Lower the heat and let it simmer on low heat (covered) for 20 minutes. Uncover; turn the chicken pieces around in the pan, mixing the sauce with the chicken. SImmer for 10 minutes.

Remove the cover, stir again, and let the dish simmer for another 15 minutes. When much of the liquid has evaporated, it is done. Make sure to save some of the pan juices to pour over your rice with the chicken.

Serve over white rice.
