2 T. margarine
1 c. onion
1 c. diced carrots
1 c. diced potatoes
1 c. chicken broth
1 t. salt
1/2 stick butter or margarine
1/4 c. flour
1/8 t. pepper
3 c. milk
1 c. shredded cheddar cheese

Directions:
Directions:
Saute onion in 2 T. butter/margarine. Add carrots, potatoes, broth and salt. Cover and bring to a boil, reduce heat and simmer until vegetables are tender. Melt 1/2 stick butter/margarine in large pan. Blend in flour and pepper. /remove from heat. Stir in milk. Heat to boil, stirring constantly; boil 1 minute. Stir in cheese and vegetables.
