1 onion
1 green pepper
2 T parsley
8 oz pimento stuffed green olives
1/4 t salt
1/4 t pepper
1 lb sharp cheddar cheese
1 clove garlic, minced
8 oz can tomato sauce
1/2 c olive oil
crusty rolls

Directions:
Directions:
You will be putting these foods through a meat grinder. Cut onion, green pepper and cheese into pieces and feed through grinder. Feed through olives. Add remaining ingredients and stir together, using hands to mix well. Cut the tops off rolls and hollow out the inside. Fill with cheese mixture and replace roll lid. Wrap individually in foil. Bake about 30 minutes at 350.

This was a Villaescusa family favorite during Lent. Jean would usually use an extra sharp Cracker Barrel or Tilamook cheese. It is cheaper to use salad type olives instead of whole ones. These rolls can be frozen and thawed out before baking, when ready to use.
