1 lb. smoked sausage, cut lengthwise and then into inch slices
cup chopped onion
1 to 2 cloves garlic, finely chopped
2 (15-oz) cans black-eyed peas, drained
1 (14.5-oz) can low sodium chicken broth
tsp. hot pepper sauce, or to taste
1 (10-oz) pkg. frozen chopped collard greens, thawed

Cornbread topping:
2 cups Martha White Self-Rising Corn Meal Mix
2 tsp. sugar
1 1/3 cups buttermilk
1 egg, beaten
cup oil
cup (2 ozs) shredded Cheddar cheese
cup finely chopped fresh parsley or cilantro

Heat oven to 400. In 12-inch cast iron skillet, over medium-high heat, cook sausage, onion and garlic until sausage is browned and onion is translucent. Stir in remaining filling ingredients, bring to a boil, reduce heat and simmer 10 minutes.
In a large bowl, combine all cornbread topping ingredients; stir until smooth. Spoon batter over sausage mixture in skillet, spreading evenly. Bake in 400 oven for 30-40 minutes or until cornbread is browned.
