1 lb boneless, skinless chicken breast, cubed & cooked
1/2 onion
1/2 bell pepper
1/2 pint sour cream
2 C shredded cheese ( I like Mexican blend)
1 small can tomato sauce
1/2 can enchilada sauce

Directions:
Directions:
After chicken is cooked & drained, add onion & bell pepper, let cook down a few minutes. Add sour cream & 1 C cheese, cook until melted. Add seasonings to taste, then add tomato sauce. You may want to add some water if you want more sauce in it. Once all warmed, turn off heat. In 9x13, put mixture into tortillas and roll. Makes 8-10. Cover tortillas with taco sauce, 1/2 can enchilada sauce and rest of cheese. Bake at 400 for 20 minutes
