- 1 beef tenderloin ( around 6 lbs)
-2/3 cup Dijon mustard
- 3 tbsp coarsely ground black peppercorns
- 3 tbsp coarsely ground green peppercorns
- 3 tbsp coarsely ground white peppercorns

NOTE: You may just use store bought medley of peppercorns if you prefer

- Preheat oven to 425 degrees
- Brush meat with Dijon mustard
- Cover and press with peppercorns all around
- Bake for one hour
