3 chicken breasts, skinned and boned
2 eggs lightly beaten
1 tsp. salt
1/8 tsp. pepper
3/4 cup fine dry bread crumbs
1/2 cup vegetable oil
2 cups tomato sauce
1/4 tsp. basil
1/8 tsp. garlic powder
1 tbsp. butter
1/2 cup grated Parmesan cheese
8oz. mozzarella cheese, sliced and cut in triangle

Directions:
Place chicken breasts on cutting board and pound lightly. Combine eggs, salt & pepper. Dip chicken into egg mixture, then crumbs. Heat oil until very hot in a large pan. Quickly brown chicken on both sides, remove to shallow baking dish. Poor excess oil from pan. In same pan, stir tomato sauce, basil and garlic powder. Heat to boiling, simmering two minutes or until thickened. Stir in butter. Pour over chicken; sprinkle with cheese, and cover. Bake at 350 for 30 minutes uncovered. Place mozzarella cheese over chicken. Bake 10 minutes longer or until cheese melts.
