1 Box of frozen chopped spinach
2 C of shredded Swiss cheese
1 pkg of lean bacon (1 lb)
2 frozen deep dish pie crusts
2 C milk
4 Eggs

Directions:
Preheat oven to 425

Put frozen spinach in a strainer and run it under hot water to thaw. When thawed, ring out the water with your hands or use a paper towel - but make sure to get as much water out of the spinach as you can.

Take pkg of bacon and slice it into 1/4" - 1/2" chunks - brown it in a frying pan over med-high heat. Drain the bacon on paper towel to get the grease out.

In a mixing bowl, beat 4 eggs, add 2 cups of milk, stir in drained spinach, cheese and bacon.

Place mix into the 2 pie crusts evenly.

Bake at 425 for 10 min. Reduce heat to 350 for 30 min. Check it after 20 min to make sure the edges are not too brown.
